Paleo Blueberry muffins
Ingredients
3 cups almond flour
1 tsp baking soda
1/2 tsp cinnamon powder
1/2 tsp nutmeg
1/2 cup ghee
1/2 cup raw honey
1 TBSP vanilla extract
3 eggs
1 cup blueberries
Instructions
1 Preheat oven to 350 degrees
2 Mix the dry ingredients well
3 Melt the ghee, add honey and vanilla
4 Whisk the eggs
5 Dump 3 and 4 into 2 and hand toss it
6 Fold in the blueberries
7 Load the muffin pan
8 Bake 18-20 minutes
Description
You can omit the cinnamon and nutmeg for a super simple recipe. I tend to add them just because. Fresh blueberries are awesome! Frozen is great, too. Don’t thaw them too much. If you do, you’ll get more of a blueish muffin which also rocks, either way, I’m eating them.
Feel free to experiment with other fruits. I’ll update when I do, but I’ve only done blueberries so far. I’d probably try cutting up fresh strawberries. Let me know if you other fruits and I’ll document it here.
